When items are deleted in Zoot or Outlook, corresponding items are deleted during synchronization. You can change this behavior by setting options via the Tools | Options dialog. Click the Outlook tab and see the "Sync deleted Outlook items" section. Put a checkmark next to the item types you want to include when processing deleted items during synchronization.
By default, only deleted Mail items are excluded during synchronization.
